Analysts at Marketing Logic have assessed the development level of dining infrastructure in Russia's largest cities based on publicly available information and the company’s own data mart. As part of the research, analysts have compared the country's Top 15 major cities in terms of the density of cafés, restaurants, bars and fast food establishments per 10,000 residents.
Kazan topped the ranking of Russia's largest cities by food industry development, with Voronezh and Perm coming in second and third. Saint Petersburg, traditionally considered one of the main "restaurant" cities in the country, ranks fourth. In the "restaurants" category, Saint Petersburg ranks second, slightly behind the capital of Tatarstan. Novosibirsk, Ufa and Chelyabinsk are at the bottom of the major cities ranking in terms of dining availability. Moscow is in the bottom half of the list, ranking eleventh out of fifteen.

"When assessing the development of the restaurant infrastructure in Russia's largest cities, we came up with a curious result: the leaders were not the traditionally expected capitals, Moscow and Saint Petersburg. As for the main ‘surprise’ of Kazan's ranking, we also noticed that the city was the leader in all categories assessed, except fast food, where it was behind seven cities, with Voronezh, Omsk and Krasnoyarsk in the lead. We did not analyse the reasons, it may be due to traditions and demand for healthier food, or it may be due to a later market uptake of players in this niche. If we talk about the overall dining market of the Top 15 largest Russian cities, the figures are still lower than in most European countries, but, for example, the number of establishments in Kazan is already comparable to the data on Spain published by European statistical agencies." - Dmitry Galkin, Managing Partner, Marketing Logic.
